We’ve all been there- trying to figure out meal prep while juggling everything else life throws at us. Honestly, it can feel like a full-time job just brainstorming what to feed the family for the week. As an active and long-standing member of the “Society for Overwhelmed Humans,” trust me when I say I get it.

There were weeks when my kids lived on bread and jam, bread and peanut butter, and bread and cheese-on-repeat because I was running on empty in the creativity department. But here’s the good news, my Samster: fear not. I’ve done the brainstorming for you.

I’ve concocted a list of delicious, easy, and simple fillings that take little to no time to pull together, and they pair perfectly with my Homemade Whole Wheat Pitas. I’ve also considered my vegan and vegetarian SAMSTERS by including exciting plant-based options. And well, meat-eaters… I  got you covered! There’s a little something for everyone here, including kid-friendly ideas, all while encouraging the use of wholesome and  healthy ingredients.

Best of all, they can be made ahead of time and stored in the freezer. They reheat beautifully in a toaster, oven, or airfryer in just 4–8 minutes.

Yuh know how we do in Trinbago... Full of  flavor, bold, and never boring. These local  favorites- from smoky baigan choka to  tasty saltfish buljol- are easy to make and  perfect for stuffing into your homemade  pitas.

1. Saltfish Buljol

Flaky saltfish tossed with fresh tomatoes, onions, sweet peppers, and a squeeze of fresh lime.
Prep: Soak and boil saltfish, flake,  saute and mix  with diced veggies and lime, stuff into pita.

2. Baigan Choka (Vegan)

Smoky roasted eggplant mashed with garlic, onions, and seasonings.
Prep: Roast eggplant, peel and mash, sauté garlic and onions, mix together, fill pita.

3. Tomato Choka (Vegan)

Fire-roasted tomatoes mashed with onions, garlic, and hot peppers.
Prep: Roast tomatoes (and peppers), peel and mash, sauté onions and garlic, mix, stuff pita.

Tender curry chicken chunks, perfectly spiced.
Prep: Sauté chicken with onions, garlic, and curry powder, cook until tender, optional coconut milk, fill pita.

Don’t worry if you’re skipping meat...These fillings are just as delicious as any other! They add a touch of variety, a burst of flavor, and a whole lot of yum to your pitas.

Mashed chickpeas with garlic, lemon, and a little vegan mayo.
Prep: Mash chickpeas, mix with garlic, lemon, vegan mayo, season, stuff into pita.
