High-Protein Gluten-Free Bagels
Ingredients
2 cups almond flour
1 tablespoon baking powder
1 large egg
1 cup cottage cheese
¼ cup shredded pepper jack cheese
¼ teaspoon salt
Directions
Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
In a large mixing bowl, combine the almond flour and baking powder.
Add the egg, cottage cheese, shredded pepper jack cheese, and salt.
Mix everything together until a soft, slightly sticky dough forms.
Divide the dough into 6 portions for larger bagels or 8 portions for smaller, kid-friendly bagels.
Roll each portion into a ball, then gently form a rope and join the ends to create a bagel shape.
If using Everything Bagel Seasoning, gently roll each shaped bagel in the seasoning before placing it on the baking tray. The dough is naturally a little sticky, allowing the seasoning to adhere beautifully without the need for an egg wash.
Arrange the bagels on the prepared baking tray.
Bake for 35 minutes, or until the bagels are golden brown and firm to the touch.
Allow the bagels to cool for about 10 minutes before serving.

Everything Bagel Seasoning is completely optional, but it adds incredible flavor and texture to these bagels.
Rather than brushing the bagels with an egg wash, simply roll each shaped bagel in the seasoning before baking. The dough is naturally sticky enough that the seasoning clings well and stays in place throughout baking.

Notes:
Makes 6 large bagels or 8 smaller, kid-friendly bagels.
Store in an airtight container in the refrigerator for up to 5 days.
These bagels also freeze beautifully. Simply thaw and toast before serving.
