Ingredients:

Dough:

  • 4½ cups all-purpose flour

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 3 teaspoons yeast

  • 1 teaspoon Italian herbs

  • 2 tablespoons oil (coconut oil or oil of choice)

  • 1¾ cups warm water

Cheesy Potato Filling:

  • 2½–3 cups boiled, mashed potatoes

  • 2 tablespoons pickled peppers or pickled jalapeños, finely chopped

  • 2 cloves garlic, finely minced

  • ½ cup frozen peas and carrots, thawed

  • ½ cup grated fresh carrots

  • 1 tablespoon green seasoning

  • 1 cup grated cheddar cheese

  • ½–1 teaspoon black pepper, to taste

  • Salt, if needed (taste first)

Optional Topping:

  • 3 tablespoons butter, melted

  • 1 tablespoon chopped parsley

  • 1 teaspoon smoked paprika

Instructions:

Filling:

  • In a mixing bowl, add the warm mashed potatoes and mash until smooth and lump-free.

  • Stir in the minced garlic, pickled peppers or jalapeños, green seasoning, black pepper, and salt if needed.

  • Add the frozen peas and carrots along with the grated fresh carrots. Mix until evenly distributed.

  • Fold in the grated cheddar cheese and mix until everything is well combined and creamy- Cover and set aside.

Dough:

  • In the bowl of a stand mixer, combine the flour, sugar, salt, yeast, and Italian herbs.

  • Add the oil and warm water. Knead using the dough hook for 8–10 minutes, until smooth and elastic.

  • Lightly oil the dough, cover, and allow it to proof for 40–45 minutes, or until doubles in size.

Stuff:

  • Punch down the risen dough and divide it into 24 equal pieces.

  • Roll each piece into a ball, flatten slightly, and add 1–2 tablespoons of filling to the center.

  • Bring the dough together, sealing it well so the filling does not ooze out during baking. Place seam-side down in a greased baking dish.

  • Cover and allow the stuffed rolls to proof for 30–40 minutes.

  • Optional: If desired, sprinkle any remaining cheese lightly over the tops.

  • Bake in a 375°F (190°C) oven for 30–40 minutes, or until beautifully golden brown.

  • Mix the melted butter, parsley, and smoked paprika.

  • Brush the seasoned butter over the rolls immediately after baking.
