Ingredients:
Dough:
4½ cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
3 teaspoons yeast
1 teaspoon Italian herbs
2 tablespoons oil (coconut oil or oil of choice)
1¾ cups warm water
Filling:
2½ cups chopped ham
2 tablespoons pickled jalapeños or pickled peppers, finely chopped
1 cup grated carrots
½ cup (4 oz) cream cheese, softened
1 tablespoon green seasoning
1 teaspoon lemon pepper (or black pepper)
1 tablespoon yellow mustard
1 cup grated cheddar cheese (or mozzarella)
Optional Topping:
3 tablespoons butter, melted
1 tablespoon chopped parsley
1 teaspoon smoked paprika
Instructions:
In the bowl of a stand mixer, combine the flour, sugar, salt, yeast, and Italian herbs.
Add the oil and warm water. Knead using the dough hook for 8–10 minutes, until smooth and elastic.
Lightly oil the dough, cover, and allow it to proof for 40–45 minutes, or until doubled in size.
To prepare the filling, combine the grated carrots and chopped pickled jalapeños in a mixing bowl.
Add the cream cheese and green seasoning and mix until smooth.
Stir in the chopped ham, lemon pepper, mustard, and grated cheese. Mix until fully combined. Set aside.
Punch down the risen dough and divide it into 24 equal pieces.
Roll each piece into a ball, flatten slightly, and add 1–2 tablespoons of filling to the center.
Bring the dough together, sealing it well so the filling does not ooze out during baking. Place seam-side down in a greased baking dish.
Cover and allow the stuffed rolls to proof for 30–40 minutes.
Optional: Brush with egg wash. If desired, sprinkle any remaining filling lightly over the tops.
Bake in a 375°F (190°C) oven for 30–40 minutes, or until beautifully golden brown.
Mix the melted butter, parsley, and smoked paprika.
Brush the seasoned butter over the rolls immediately after baking.
